I have been off any sorts of sugar for about a year, as I have difficulty controlling my blood sugar level and often suffered from too low levels. Also, I find that sugar really affects my mood and ability to concentrate. I would never go back to processed sugar, as they give me headache, make me irritable and jittery.
However, I want to start eating small amounts of natural sugars, such as honey, again. So I have started to make my own no-bake granola, based on a recipe found here (via Little Homestead in the City) but I tweaked a little to make it a double batch, with a little less honey. I also just throw in my usual seed mix (pumpkin, sunflower and sesame seeds all mixed up in a jar) instead of just sesame seed.
- 2 cups oats
- 1/2 cup seed mix (any mix will do!)
- 3 TBSP honey
- 3 TBSP butter
- 1/2 cup dried fruit(optional)
2. As the butter melts, stir in the honey and mix until well blended
3. Stir in the seed mix and cook for 2 minutes, stirring continuously
4. Stir in the oats, and cook until the oats are golden brown (stir constantly)
5. If you want to add dried fruits, do so as the oats are turning brown
6. Sprinkle the hot oats on oven trays evenly and let it cool
7. Store in an air-tight container
The reason why I made the recipe a double batch is because if you made a single batch, I promised you won't have any left to put away. We ate about 3/4 of the granola in one go, most of which were eaten while the granola was still warm! It smells divine, and I really hope you enjoy it as much as we do.
